No-Bake Berry Coco Energy Bites

If you’re not well prepared for those afternoon hunger pangs, it can be difficult to resist the chips, cookies, candy and various other treats in your office kitchen. But processed snacks do you no favors in the long run—they’re packed with sugar and other nefarious ingredients, which can actually make you feel sluggish (not to mention hungry again in half an hour).

To solve your snacking woes, we created these recipes for delicious vegan energy bites. They’re healthy, ridiculously easy to make and incredibly filling. Whip up a batch and you’ll be set for the week. (They’re also a great on-the-go breakfast idea.) Get the recipes below.

Raspberry Coco Energy Bites Makes 10

Ingredients:

1 cup rolled oats 1 cup almond flour (optional: sub in 1/2 cup protein powder) 1/3 cup unsweetened shredded coconut 1/2 cup crushed fresh raspberries 1/2 Tbsp melted coconut oil Honey or agave to taste

For coating:

Shredded coconut

Freeze-dried raspberries

Directions: Combine all ingredients in a mixing bowl. Roll mixture into balls by the spoonful. For the coating, crush freeze-dried raspberries into a powder and mix with shredded coconut. Roll balls into coating. Place balls on a parchment-lined baking sheet and refrigerate 15 minutes.

Guilt-Free Chocolate Dessert Bites Makes 10

Ingredients:

1 cup old fashioned oats 1/2 cup ground flaxseeds 1/2 cup creamy peanut butter 1/2 cup semi-sweet chocolate chips (optional: sub in vegan or carob chips) 1 Tbsp honey or agave 2 Tbsp unsweetened cocoa powder 2 Tbsp water

For coating:

Extra cocoa powder Cinnamon (optional)

Directions: Combine all ingredients in a mixing bowl. Add water (½ Tbsp at a time) as needed until mixture sticks together. Roll bites in cocoa powder and cinnamon. Place balls on a parchment-lined baking sheet and refrigerate 15 minutes.
