1.5 oz of a nigori (unfiltered) sake 1 oz light rum 1/2 oz fresh lime juice 3/4 oz orgeat or almond syrup 2 drops absinthe 1 inch fresh lemongrass
Muddle lemongrass (cut into smaller pieces first) in a shaking tin, then add the above ingredients. Shake, strain into an ice filled Collins glass and top with club soda (1-2 oz). Garnish with an edible seasonal flower, Ink suggests to use borage blossoms, but have used jasmine in the past.
